This started out as a lemon-flavoured Victoria Sandwich but I decided to have a bit more fun with fondant icing and got lured into the addictively inviting world of “gilding the lily”!
Initially I was going to apply some fondant icing just to the top of the cake, but after playing about with attempts at modelling flowers and lace designs while the cake was baking – as you do! – I got a touch carried away. Normally I don’t go in for bold colours, although just occasionally……….But that is all part of what is so fun about baking, especially when there is no time pressure and the like!
The cake was sandwiched with vanilla buttercream and just a thin layer of lemon curd. I also covered the cake lightly in vanilla buttercream which then acted as a glue to hold the fondant icing in place.
I didn’t worry too much about having perfectly smooth fondant icing as this was a bit of ad-hoc fun. All in all this took just over 2 hours, with a chunk of that time leisurely spent making the decorations and the lace effects.
