This is one of my “go-to” snacks for whenever I want something quick and tasty. Assembled in moments and cooked in about 10 minutes, these epitomise fast food for me and are perfect devoured in front of the television, or passed around at any gathering for others to tuck into.
This “left-overs” dish really could not be simpler to make and you can use whatever ingredients are lying around. I often make this with vegetables from the allotment, but it works well with tinned veg such as sweetcorn and artichokes.
I love using a spicy sauce from the fridge: besides, there are always bottles of different sauces lurking around, but a decent barbeque sauce works a treat. I sometimes add some left-overs from a roast: chicken and pork are particularly good here, but often I have this meat-free.
Recipe: speedy spiced tortilla bites
- 2 soft tortillas or flatbreads of any type
- a few tablespoons of sauce of choice: passata, barbeque sauce, chilli sauce – or even a mixture!
- fresh or tinned sweetcorn
- onions, sliced: spring onions, red onions…any onions
- a chopped chilli (or more!) of any type – optional
- a few tablespoons of grated cheese of any type or a few dollops of soft cheese such as cream cheese or goats cheese
- anything else you want to use: prawns, left-over roast meat….
(1) Preheat the oven to 190C (fan).
(2) Spread whichever sauce you are using onto each tortilla or flatbread.
(3) Top with whatever vegetables and nmeat you want to use.
(4) Sprinkle over the cheese or dollop it over if it is a soft cheese
(5) Bake in the oven for about 10-12 minutes or until the tops are bubbling. Remove from the oven and serve.
