Tangy, fruity macarons are a joy to eat and this is one of my favourite macaron flavour pairings.
Shatteringly crisp, buttery pastries, glazed with lemon syrup, filled with an almond and vanilla cream and fresh strawberries: what is not to love?
Episode 2 on Britain’s Best Home Cook proved to be something of a particular challenge for me, with a few elements in my earlier dishes being not quite right: schoolboy errors mainly! But that was part of the entire delicious learning experience. Continue reading “Episode 2 of my time on Britain’s Best Home Cook – the roulade challenge”
Something of a cheat of a recipe, using handy shortcuts, these gorgeous tarts can be made up very speedily and with total ease, yet they taste as good as any of the high-end tarts you can buy for a small fortune!
This is a cake version of my partner’s favourite ice cream from childhood: a Neapolitan (or Harlequin), an ice cream block with layers of chocolate, strawberry and vanilla ice cream.
Although I made this particular cake as my gift for a colleague’s wedding, I have made smaller one-tier versions of this cake, without much in the way of elaborate decorations, on many an occasion. A case of when simplicity absolutely reigns! Continue reading “Lemon, strawberry & Prosecco cake”

Custard slices are one of my favourite teatime sweet treats, even though I don’t have a very sweet tooth! I love the crispness of the pastry, the richness of the crème pâtissière and the stickyness of the fondant topping. Continue reading “Passionfruit & strawberry custard slices (gluten-free)”
This is a very refreshing cordial, made using the some of the rhubarb and the first of the year’s strawberry pickings from the allotment. Just dilute it with ice cold water or, better still, sparkling water: 1 part cordial to 4 or 5 parts water. Continue reading “Rhubarb & strawberry cordial”
A classic doughnut, rolled in sugar and filled with jam: a real treat. Continue reading “Jam doughnuts”
